Flija

Layered crêpe pie

⏱ 4–5 h🍽 Serves 8–10

The patient one. Thin batter is painted on in rays, layer after layer, and baked under a hot lid (saç), traditionally outdoors over embers. A house that makes flija is a house expecting guests.

Përbërësit

Ingredients

  • 1 kg (about 8 cups) all-purpose flour
  • About 1.5 L water
  • 1 tsp salt
  • 250 ml plain yogurt or sour cream, thinned with a little water
  • 200 g butter, melted, plus oil for the pan

Përgatitja

Method

  1. Whisk the flour, salt and water into a smooth batter about as thick as pancake batter. Rest it for 20 minutes.
  2. Grease a wide round pan. Spread a thin layer of batter over the base and bake it under a very hot grill (or a saç) until it sets and turns golden.
  3. Brush with the cream-and-butter mix. Spoon the batter in rays from the centre to the edge, leaving gaps between them.
  4. Bake until golden. Brush again and fill the gaps with new rays. Repeat for 15–20 layers, alternating the pattern each time.
  5. Finish with plenty of butter, cover with a cloth and rest 15 minutes before cutting into wedges.

Tip: Serve with yogurt, pickles or honey. In summer many Kosovar families make flija outdoors with a saç.
